Our story
It began with an eagle, hand-carved from a single piece of Dolomite stone. A symbol of strength and vision, it inspired a family legacy built on authenticity, precision, and excellence. Stone Eagle Winery is that vision realized, fulfilling the family’s desire to share their love of food, wine and experiences while crafting terroir-driven wines that reflect the land and a devotion to detail.
Our VINEYARDS
Stone Eagle’s vineyards are set on 30-acres of former peach and apple orchards. Their proximity to Lake Ontario provides exceptionally well-drained soils and warm microclimates, perfectly suited to the varieties that thrive here. Stone Eagle’s portfolio focuses on just five varietals. Each vine is carefully tended by hand, embodying the art of viticulture and the science of letting the vineyard speak. This harmony between land and craft allows Stone Eagle to extract the best fruit from each block, every vintage.
Winemaking
Winemaking at Stone Eagle is the work of patience and restraint, a non-interventionist approach that knows exceptional wines evolve over time. From hand-harvesting the finest fruit to guiding it through gentle fermentation, every step is intentional. The estate’s Extended Barrel Aging program allows the wines to mature slowly, building structure and nuance that cannot be rushed. Stone Eagle favours premium French and American oak with tight grain and lighter toasts, which allow for longer aging without overwhelming the wine. Each barrel is crafted from staves that have been air-dried longer to ensure soft tannins and refined structure, creating wines of remarkable depth and balance.
